Orange food (no, not citrus...tho that's allowed, too)

Now that autumn has hit, I thought I would suggest a side dish that I have found to be rather nice when the temperature dips. Don't remember where I got it, except that it began life as a French bistro dish, but after being tweaked and messed with here are the general rules:

2 lbs sweet potato, peeled and diced (1 inch dice)
3-4 garlic cloves (whole)

Boil together in salted water until the sweet potato is done, about 30 minutes.
By the time the sweet potato is done, the cloves of garlic will be quite soft....almost mushy.
Drain, and add:
1 container of frozen chopped spinach, drained and squeezed dry.
Mash vigorously....or just until you like the texture.
Add salt and pepper to taste.
